Summer sausage – Wisco Meats one of a kind Northwoods summer sausage blend makes a perfect snack or lunch meat. Meat should be added to a venison/pork (9lbs venison to 3.5lbs pork) blend. Beef can be substituted for venison. Meat combination should be ground one time. Spice packet of proper batch size should be added to 4 cups cold water per 12.5lbs seasoning packet. Seasoning/water mixture should be added as meat is being mixed. Rinse seasoning packet to ensure all seasoning has been added to meat mixture. Mix for 3-5 minutes, and grind again. If jalapenos or cheese is desired use 1lbs to 12.5lbs meat and mix until it looks consistent. Mixture is now ready to be stuffed into 2 ½ x 24 mahogony collagen casing. Smoking time will vary depending on cooking method being used. An internal temperature of 156°F is recommended.

Seasoning Ingredients: Sea Salt, Sugar, Spices(Including Black Pepper, Mustard Seed, Cayenne Peper, Chipoltle Pepper, Habanero Pepper, Jalapeno Pepper), Dehydrated Garlic, Maltodextrin, Natural Flavor, Natural Spice Extractives (including Paprika), Smoke Flavor, Dextrose, Corn Syrup Solids, Spices (Including Ground Mustard), Monosodium Glutamate, Whole Mustard Seed, Garlic Powder, Natural Spice Extractives, Sodium Nitrite, FD&C Red #3.
