About our Sausage

For a half batch of sausage 9lbs of boneless venison is needed. For a full batch of sausage 18lbs of venison is needed. A half batch of sausage will yield 10-13lbs depending on which product is chosen, full batch will yield 20-26lbs.

Products that are highlighted in the sausage pricing chart below will double in weight (ex: bacon for a half batch is going to yield a finish weight of 17-19lbs and full batch will be 34-38lbs). All products will have pork added to assure proper consistency and superior flavor.

Boneless venison being brought in MUST be in food grade bags or container. We inspect each package for proper trimming(excessive fat or rib meat that has not had the fat taken off) and cleanliness(excessive hair or dirt), we reserve the right to reject any venison that does not appear to make a quality product. Venison can have a small amount of fat without affecting quality, though any excess amount of fat will severely effect product. When trimming venison the best procedure is to remove ALL FAT that you can. Venison fat is NOT the same as pork or beef fat, it holds very gamey taste and breaks down much quicker resulting in poor quality sausage.
