Wisco Meats is a family-owned small business specializing in two of Wisconsin’s signature foods: beef jerky and wild game. (Sorry, cheese! Wisconsin has a new snack favorite.) Wisco Meats operates a state-of-the-art meat processing facility in Wisconsin’s Northwoods – Coleman, Wisconsin. Owner Justin Wisnefske, who began his career as a butcher and meat processor in 2003 in Oconto, opened Wisco Meats in 2022. Backed by 20+ years of experience as a meat cutter, Justin provides expert meat processing for sportsmen in Wisconsin and small-batch beef jerky for hungry snackers nationwide.

Wild Game Meat Processing

At its Wisconsin-certified meat processing plant, Wisco Meats processes venison, bear, waterfowl, and wild game. Butchering services include deer and bear skinning, cutting and packaging. Sportsmen can choose the cuts of meat they prefer: steaks, roasts, or stew meat. Additionally, Wisco Meats processes and packages wild game into hamburger, breakfast sausage, bratwurst, ring bologna, snack sticks, summer sausage, hamburger, and natural casing wieners.

Smoky, Savory Beef Jerky 

In conjunction with the butcher shop, Wisco Meats produces great-tasting, natural hickory-smoked beef jerky made from Justin’s special recipe. Made in small batches and shelf-stable, the beef jerky maintains its quality for up to one year. The resealable, 3.5 oz and 15 oz. packages provide a quick, convenient, and nutritious snack for people on the go. The portable snack packs easily for hiking, camping, fishing, and hunting trips.
