Ring Bolonga – Wisco Meats old fashioned style ring bologna will be sure to bring you back to the good old days! Seasoning should be added to a venison/pork (9lbs venison to 3.5lbs pork) blend. Beef can be substituted for venison. Meat combination should be ground one time. Spice packet of proper batch size should be added to 4 cups cold water per 12.5lbs seasoning packet. Seasoning/water mixture should be added as meat is being mixed. Rinse seasoning packet to ensure all seasoning has been added to meat mixture. Mix for 3-5 minutes, and grind again. Mixture is now ready to be stuffed into 40mm pre tied collagen casings or 38-42mm beef rounds. Smoke or boil until the internal temperature of 156°F is reached. Typical cook times are 2-4 hours.
