Jerky Whole Muscle or Ground and Formed – Original or Flavored– Wisco Meats homemade mouthwatering craft Jerky seasoning is our signature blend that can be added to sliced (3/16 thickness) Venison or Beef (no silver skin or fat). When using the whole muscle/sliced method place desired amount of meat with recommended amount of seasoning into a Nonmetallic bowl or tub. Bowl or tub should be of a similar size to amount of product you will be making. Pour seasoning over top of meat and add 1 cup water to seasoning package, rinse out Wisco Meats Jerky seasoning packet and pour over meat. Mix the meat/seasoning mixture every 8 hours or less (can be more frequent) for 24-hour total marinate. After 24 hours lay meat on racks that have been sprayed with non-stick spray. Smoke, cook or dehydrate to your liking. Wisco Meats recommends no matter the total time in chosen oven to reach and internal temperature of 156°F.

Wisco Meats Jerky Seasoning can also be added to ground beef or venison that is 90% lean or higher. Grind meat through a fine plate. Add Wisco Meats seasoning and mix well (minimum of 5 minutes). Grind a second time through fine plate. Ground process should be stuffed out of a jerky gun or similar process to get a final thickness of 3/16” by 1.5” wide. Ground meat can be stuffed and smoked or dehydrated immediately. Be sure to reach a minimum of 156°F internal temperature.
