Bratwurst – Original – Wisco Meats game changing bratwurst seasoning will change the same old brat to a brat you can’t wait to have for another meal! Wisco Meats bratwurst blend should be added to 50% Venison or Beef to 50% Pork (Ex: 4.5lbs venison to 4.5lbs pork). Can also be added to 100% pork, but make sure pork is 75-80% Lean. Grind meat combination once. Add seasoning and begin mixing, while mixing add 2 cups cold water. After mixing well for at least 5 minutes grind a second time. If desired you can add Hi-temp cheese (1lbs per 9lbs), jalapenos (1lbs per 9lbs) or extra garlic(1/4 cup minced garlic) at this time, and mix well until product appears consistent. The sausage is now ready to be stuffed into casings of your desire (Wisco Meats recommends 32mm Natural Hog Casing) or into packages of your liking. Be sure to cook thoroughly, reaching an internal temperature of 160°F.
