Bacon – Wisco Meats premium bacon blend is made to be added to 50% Venison or Beef to 50% Pork (Ex: 4.5lbs venison to 4.5lbs pork). Pork should always be 75-80% lean, do not use lard. You can also add it to All Beef or All Pork that is 80% Lean. Spice should be added to meat after the first grind. After adding spice begin mixing, while mixing add 1-2 cups of water and 1 cup maple syrup per 9lbs batch (2-4 cups water and 2 cups maple syrup for 18lbs batch). Mix for at least 5 minutes. Grind a second time. The meat mixture should be pressed into a baking pan that is WELL coated with a nonstick spray. Can be smoked or cooked in the oven. Internal temperature should reach a minimum of 156°F. Do not over cook over 158°F. Be sure to thoroughly cool the product prior to slicing.
